In recent years there has been a lot of development of eating places on Skye. In the summer, demand is still outstripping supply - especially in Portree. One of the best of the newer restaurants is Dulse & Brose at the Bosville Hotel on Bosville Terrace.
The menu is inspired by Skye’s world-class produce and it treats it with simplicity and respect. It’s something that many of the new places try, but then overcomplicate things and the important ingredients get lost. Each placemat is a map of Skye showing where on the island the main produce has been sourced. This really is local stuff, and it's good, and the kitchen knows what to do with it.
The style is 'upper end casual' and the food seems to be of a consistently good standard. It is top of my list for a good meal out in Portree. That said, I've not been in when it has been extremely busy.
